Meatless Monday #8

On Meatless Monday, I bring to you some of the simple meals that I eat that do not include  meat.  Going without meat one day of the week does not have to be boring or dreadful.  Sometimes, it is challenging.  However, it has shown me that many of us have an over dependence on meat.  And, so often, we do not get enough fruits and vegetables in our diet.  Meatless Monday is a chance for me to focus on eating nutritious meals that include a variety of fresh produce.  If you decide to take on the challenge, I believe that your body will definitely appreciate it.  Fruits and vegetables can be prepared in so many ways. Remember, if you can make a dead animal taste good, you can certainly make fruit and vegetables taste good!

Vegetable Soup with Saltine Crackers

This vegetable soup was prepared in my crock pot.  It included chopped kale, carrots, potatoes, celery, broccoli, butter peas, bell pepper and brown rice.  All of the vegetables were fresh except the butter peas (they were frozen).  I started off with about 3 cups of water and a teaspoon of garlic butter.  Then, I added all of the chopped vegetables except the potatoes.  I waited until the soup was almost done before adding the potatoes.  I seasoned the soup with celery salt, cayenne pepper, dill weed, and garlic powder.  After the vegetables cooked (about an hour), I added 4 slices of cheese and allowed it to slowly cook into the soup.  YUMMY!

 
 
If you challenge yourself to a meatless day, it does not have to be Monday.  Whatever works for you!

  2. Haha Trinity, that last line is hilarious..."if you can make a dead animal taste good, you can certainly make fruits and vegetables taste good". Talk about food for thought, lol! I LOVE fruits and vegetables and ANY kind of soup, which btw...looks delicious! Thanks for giving us some great ideas on how to spruce up our fruits and veggies. Have an awesome week my friend!! :D

  4. This looks so good. I am trying to commit to at least 2-3 vegetarian meals a week and sometimes its a challenge, but there is nothing like veggies to cleanse the body.
