Meatless Monday #9

Vegetable Pot Pie

1 can of cream of broccoli soup
2 cups of frozen peas and carrots
1/2 can of diced potatoes
2 chopped sweet peppers
about 2 tsp. of fresh chopped chives
1 teaspoon parsley
1 vegetable bouillon
about 1 tsp. of garlic butter
2 frozen pie crusts

Preheat oven to 350. 
Rinse chives, peppers, and frozen vegetables.  Slightly steam the vegetables.  Add in the bouillon and garlic butter.  DO NOT OVERCOOK THE VEGETABLES. 

While the vegetables are steaming, mix the cream of broccoli with 1 cup of hot water (in a large bowl).  Stir the parsley into the mixture.

Add the steamed vegetables into the soup mixture. Stir.  Pour vegetable and soup mixture into one of the pie crusts.  Use the other crust to cover pie mixture.  Place in oven, and allow it to bake for about 40 minutes.

This was my first time making a vegetarian pie.  It was delicious!

Built To Last

Strong relationships are built upon strong, solid foundations.  Like a building, a relationship is only as strong as its foundation. Lately, I've taken a close look at the relationships in my life. And, what I've discovered is that ...
  1.  Good relationships have solid foundations. They are built upon truth . That truth happens in the beginning where trust is earned by the people in the relationship. Because truth is one of the fundamental building blocks, lies do not have to be told to save face, to cover things up, or to exaggerate reality.
  2. Because good relationships are born out of trust, the people involved in the relationship spend their future maturing the relationship as opposed to always patching things up. Remember, when the foundation is broken, the future is full of repairs. Some repairs can't be fixed - until the foundation is fixed. Who wants to spend their life always in repair mode? After a while, decorating, maintaining, "spring cleaning" and "sprucing up" should take precedence over major repairs.

So, I challenge you to examine your relationships. Are they solid- strong - lasting? Or, are there cracks in the foundation? Can it be fixed with a fresh coat of paint, a little dusting or waxing? Or, do you have to tear it all the way down, remove the broken foundation and start all over - from scratch?

Meatless Monday #8

On Meatless Monday, I bring to you some of the simple meals that I eat that do not include  meat.  Going without meat one day of the week does not have to be boring or dreadful.  Sometimes, it is challenging.  However, it has shown me that many of us have an over dependence on meat.  And, so often, we do not get enough fruits and vegetables in our diet.  Meatless Monday is a chance for me to focus on eating nutritious meals that include a variety of fresh produce.  If you decide to take on the challenge, I believe that your body will definitely appreciate it.  Fruits and vegetables can be prepared in so many ways. Remember, if you can make a dead animal taste good, you can certainly make fruit and vegetables taste good!

Vegetable Soup with Saltine Crackers

This vegetable soup was prepared in my crock pot.  It included chopped kale, carrots, potatoes, celery, broccoli, butter peas, bell pepper and brown rice.  All of the vegetables were fresh except the butter peas (they were frozen).  I started off with about 3 cups of water and a teaspoon of garlic butter.  Then, I added all of the chopped vegetables except the potatoes.  I waited until the soup was almost done before adding the potatoes.  I seasoned the soup with celery salt, cayenne pepper, dill weed, and garlic powder.  After the vegetables cooked (about an hour), I added 4 slices of cheese and allowed it to slowly cook into the soup.  YUMMY!

If you challenge yourself to a meatless day, it does not have to be Monday.  Whatever works for you!

Doing You Well Wednesday - #13

Do Not Resuscitate (DNR)!

Have you ever wondered why he/she stopped calling, texting or tweeting?

Have you ever considered that that person's season in your life is over? They have completed their assignment in your life and it is now time for them to move on, and it is time for you to move on. They did not come to stay. Their visit may have been to guard you, to guide you or to help grow you. Whatever their reason for being in your life - their purpose was TEMPORARY. Remember all temporary assignments don't become permanent duties.

However, there are times when people enter our lives and they exit as quickly as they entered. They are like a thief in the night. They come to wreak havoc and to leave a path of destruction in every area that they touch. We often wonder why. John 10:10 plainly states their assignment is - "to kill, steal, and to destroy".

Many times, we discover that we had our trust in the wrong place. Our trust should have been in Almighty God as opposed to one of HIS creations.

So, today, I challenge you to take a look at your situation. Did the person that walked out of your life help you or did they hurt you? Did he/she do more harm than good? Maybe, just maybe, it is best that they are gone. Now that they are gone, you can re-route your attention to that which is good and purposeful. Now that they are gone, leave them where they are. DNR (Do Not Resuscitate) that relationship. Stay on the course that God has set for you. Allow no one to get you off course!

Meatless Monday! #7

Starbucks Roasted Tomato & Spinach; Mozzarella Panini
This is made with Roma tomato, mozzarella, spinach and basil pesto on a piccolo roll.  I haven't yet tried to make this at home, but I plan to try it at home - very soon!  I'll have to let you know how it goes.  Starbucks does an awesome job with this Panini.  It is so delicious!  Have you tried it?

Carry On Tuesday - (Writing Prompt) The Show Must Go On

So often, we have heard the phrase, "one monkey doesn't stop the show". It may be true that one monkey will not stop the whole show. But, one monkey will stop his part in the show.

In life, it is very important that we do not become over-confident in our abilities. There is always someone who can do whatever it is that we do a little better.

Just think about it.

The restaurant doesn't close when the chef is out.

The hospital does not refuse to take care of patients when the doctor is not there.

The game does not end when a player is hurt.

Why? Because the show must go on!

This truth becomes so evident when someone is sick or passes away. Before the dead is even buried, someone else has  already come in to do their job.
In the New Testament book of Romans 12:3, the Apostle Paul warns us, "Do not think of yourself more highly than you ought..." In other words, don't have an inflated view of yourself.

Therefore, we must keep our attitudes in check and not become over confident in believing that if we don't do it - then it won't get done. Why? Because the show must go on!

Meatless Monday #6

Hamburger(Less) Helper !

If you are familiar with the traditional Hamburger Helper Meal, this meatless meal will be just as simple to prepare.  The difference is this meal was prepared with meatless grounds  - absolutely no meat involved.  To prepare this dish, I seasoned the meatless grounds just as I would ground beef , chicken or turkey.  Since the meatless grounds are already brown, I just allowed the flavors from the bell pepper and garlic to cook into the grounds (about 10 minutes or so on medium heat).

Then, I added the meatless grounds to the sauce that I had already prepared.  This simmered on medium to low heat for about 30 minutes.  During this time, I cooked my elbow macaroni until done.  Afterwards, I drained the macaroni and mixed it with the sauce. 

To complete this meal, I steamed some peas and carrots, browned some rolls and sliced some bell peppers.

Doing You Well Wednesday - #11

STOP taking others for granted!

Remember to say "thank you" when someone does a deed. Understand that people don't have to do what they do. Too often, people are taken for granted just because others expect them to do things. My mom always taught me that people don't have to do what they do. I get so frustrated with others that assume that I should handle their responsibilities. Just because I did it once doesn't mean that I want to continue doing it - at their discretion. That may have been my assignment then. All temporary assignments don't become permanent duties. I don't mind doing things because I want to do them. I despise doing things when I feel that I have no choice in the matter.

Positive Affirmation
 Today, I affirm that I am a child of the Most High God. And, because I am grateful for all of God's provisions, I refuse to take others for granted. I will bless those who curse me and who spitefully misuse me. I will do nothing today that infringes upon the rights of others. I will choose to treat others the way that I want God to treat me.

Meatless Monday #5

Spaghetti Squash
Yes, you read correctly!  The spaghetti squash can be found in the produce section near the other squash.  It is called spaghetti squash because (when cooked) the inside of it looks like spaghetti noodles.  To cook my squash, I poked holes in it with a fork and placed it in a shallow pan in a preheated oven (345 degrees) and allowed it to cook about 40 minutes.

I made my normal homemade spaghetti sauce and allowed it to simmer while I prepared these meatless grounds in a skillet.  I have tried other brands, but I like this one best.  It is already brown.  I simply put it in a skillet with sautéed bell peppers, garlic and chives.  To give it more flavor, I sprinkle in some cumin.  You may season it according to your taste buds.  Be careful with the salt - it already has salt in it.  After stirring this mixture around (about 10 minutes), I added it to the sauce along with some chopped canned mushrooms .  Then, I allowed it to simmer (about 30 minutes).  

While the sauce simmered, I removed the spaghetti squash from the oven and let it cool.  After it cooled, I cut it open, removed the seeds and forked out the squash.  Then, I added in a dash or two of sea salt along with a half teaspoon of coconut oil.

I served the sauce on top of the spaghetti squash and topped it with cheese!
