Meatless Monday #4




Breakfast
 
Cheese Toast topped with sliced cherry tomatoes, sprinkled with Ms. Dash and chives
Oatmeal topped with chopped Ambrosia Apples, sprinkled with cinnamon
Coffee



Kale Salad with chopped apples, carrots, Bell Pepper
Prior to preparing salad, kale was marinated with with olive oil and sea salt.



Green Smoothie made with Romaine Lettuce, fresh chopped broccoli, green Bell Pepper, and pears
sweetened with honey

Give Me 250 – “Silent Scene”

The writing prompt this week was to create a powerful, silent scene – no dialogue.  Click the Give Me 250 button to link up.   I went a few words over - 256 words .
 
 
Minutes after the evening sun took its rest beyond the clouds, Walter briskly walked down the dusty path that led to his man cave where he could finally relax from the hustle and bustle of everyday life.  As Walter’s steps drew nearer to the abandoned cottage that he had renovated less than a year ago, he could hear footsteps that seemed to mimic the rhythm of his footsteps as he rustled through the tall grass just off the dusty path.  Walter stepped up his pace, and so did the footsteps.  Walter wondered who this could possibly be.  Just as he stepped onto the deck of the cottage, he caught a glimpse of what appeared to be two teenage boys frantically pushing their way through the underbrush near the back door to the cottage.  From the distance, he could see that one of the boys carried in his hand the antique sword that his father had given him just before he passed away.  Walter was not sure how he should handle this situation, but he knew that he had to do something.  Although Walter was unarmed, he decided that he had to confront them.  He could not let them get away.  Just as he opened his mouth, someone from behind tackled him to the ground. Walter fought against this beast of a man who was obviously twice as big as he was. Before he could gain leverage, the attacker blindfolded him and muzzled his mouth with fabric that infiltrated the evening air with the stench of alcohol….

Doing You Well Wednesday #9

Stop Crying Over Spoiled Milk
 
 
So often, we focus our energy on situations that we have absolutely no control over.  When I was a child, my grandmother would often say, “Stop crying over spilled milk.”  As an adult, I’ve adopted the phrase, “Stop crying over spoiled milk”.  Why?  Because, there is -at least- a solution to spilled milk.  Spilled milk can be cleaned up.  However, spoiled milk must be thrown out.   From time to time, we “cry over spoiled milk”.  Simply put, we allow our thoughts to be bombarded with “stuff” that is out of our control.  We have worried about it.  We have rehearsed it time and time again.  Because that “stuff” (whatever it is) happened in the past, there is nothing that we can presently do to change it.  It is done – finished – over!!!

Today was one of those days when I awakened with my mind preoccupied with emotional torment from something that occurred in the past – (SPOILED MILK).  As I started to meditate on the WORD, the spirit arrested every evil thought and brought my thoughts into captivity through the WORD.  That WORD is found in Psalm 37, verses 1-2.

Fret not thyself because of evildoers, neither be thou envious against the workers of iniquity.

For they shall soon be cut down like the grass, and wither as the green herb.

So, I say to you today, “Stop worrying about those who have done you wrong”.   I once heard a preacher say, “Let your haters be your elevators”!!! 

From time to time, the enemy attempts to rob us of our joy and our peace. However, today, I refuse to allow the enemy to have my joy and my peace! I choose not to “cry over spoiled milk”.  Instead, I choose to meditate on the WORD.

 

Will you make the same choice- REFUSE to “cry over spoiled milk”?  Instead, MEDITATE on the WORD.

Meatless Monday #3

Creamy Rutabagas
Cranberry and Pinto Beans
Brown Rice
Cornbread




Mashed Rutabagas
1 diced rutabaga (boil until tender)
1/4 cup of Ricotto Cheese or butter/margarine
1 tbsp. of dried chives
1/4 tsp. of minced garlic
1/4 tsp. celery salt

Use a potato masher or fork to get rutabagas into a creamy consistency.  Add in cheese and seasonings while mashing.

Beans
1/2 cup of Pintos (This may vary - depends on the number of servings you'll need.)
1/2 cup of Cranberry Beans (This may vary - depends on the number of servings you'll need.)
1/2 cup of bell peppers
1/4 cup of onions
1 tbsp. of chili powder
1/2 tsp. sea salt
1/4 tsp. sugar
4 cups of water


  1. Allow the 4 cups of water and the smoked turkey neck to heat in crock pot while beans are soaking.  This step is  optional.
  2. Allow beans to soak  for 6-8 hours.
  3. Give beans a final rinse after soaking - most or all of the water will be absorbed.
  4. Pour peppers and onions into crock pot along with smoked turkey neck.  Add soaked beans and seasonings into crock pot.  Allow to cook until tender (about 2-3 hours).
While beans are cooking, prepare rice and cornbread.
After the beans have cooked, serve them atop the rice and enjoy!

STOP WORRYING ABOUT - START PRAYING ABOUT IT!


Stop worrying about that situation that is beyond your control.

Take it to God in prayer.

Worrying WILL NOT change it!

Meatless Monday #2


Broccoli - Potato Soup

3 cups of fresh broccoli
1 diced potato
1/2 cup chopped celery
1 can of cream of celery soup
1/2 tsp. dill weed
1 tsp. of chives
1/4 tsp. of celery salt

Wash and drain broccoli.  Place in blender along with cream of celery.  Add about a cup of water and puree until smooth.  Melt 1 tsp. of olive oil or margarine in stockpot. Pour puree mixture into stockpot and simmer for 30 minutes.  Add diced potato, chopped bell peppers, celery, 1/2 tsp. butter or margarine and a cup of water to  another  (small) pot and allow it to come to a boil.  After it boils, turn stovetop off.  Cover and allow to simmer for 10 minutes.  Pour potato mixture into pot with broccoli soup.  Season to taste and allow soup to simmer on low heat for 30 minutes.  Garnish with chives.

Doing You Well Wednesday #7


My Weeklong Meatless Challenge

Since the spring of 2012, I have been studying the benefits of eating a plant-based diet. Since then, I have also incorporated a variety of fresh fruits and vegetables into my diet. From time to time, I have gone on meatless challenges.

* Typically, I go without meat once a week.

* However, there are times when I choose to 
   go the entire week minus meat. This week is
    one of those weeks.

Some of the benefits of incorporating more fruits and vegetables that I've noticed:
* more energy,

* better mood,

* decrease in PMS (less cramping and bloating),

* I feel better!
Do I still enjoy a tasty burger every now and then? Yep!

Do I still enjoy succulent fried chicken from time to time? Yep!

Why? Because, I choose not to be in bondage to anything. Moderation is the key.

I am not a doctor or other health care practitioner - just a child of God trying to be the best me that I can be.

Meatless Monday! - #1






On this Meatless Monday, I will be eating a vegetable, rice soup - one of the many soup recipes that I created!
Ingredients
1 can of Campbell's Cream of Potato Soup

1 cup of mixed carrots and peas

1 cup of corn

1 cup of chopped (canned) mushrooms

1/2 cup of fresh chopped celery

1/8 cup fresh chopped red sweet peppers

1 cup of brown rice
Season to taste with the following:
celery salt

cayenne pepper

creole seasoning

curry powder

basil

dried chives

garlic powder

Puree the cream of potato with a cup of water.  Add about an 1/8 teaspoon of olive oil to a stock pot and heat.  Pour cream of potato into pot. Turn on low heat.  After rinsing vegetables, add to pot along with chopped celery and peppers.   Add seasonings and allow to simmer on low heat.  After soup simmers for 1/2 an hour, add in cooked rice and allow to cook for another 1/2 hour.  Enjoy!
