Meatless Monday #37

White Bean Chili

chopped garlic
fresh diced tomatoes
chopped bell pepper
Mrs. Renfro's Salsa  (Add this ingredient based on the amount of heat that you desire.)
chili powder
cumin
navy, northern, or some other light colored beans
Bush's Vegetarian Beans  (I like the taste that these beans add to the chili.)

 
Enjoy your chili with a fresh salad and a slice of cornbread, or with whatever you usually have with a bowl of chili!

Meatless Monday #36

Red Beans and Rice 
Boiled Corn on the Cob
 
 
 
This red beans and rice dish did not include any meat - just plenty of tasty seasonings!  I started off by sautéing chopped garlic and onions in olive oil on low heat.  Then, I added dark red beans into the mixture and seasoned with a pinch of celery salt and Tony's creole seasoning.  After allowing the flavor from the garlic and onions to marry with the beans, I added cooked brown rice and simmered on low for about thirty minutes.  I paired this dish with fresh boiled corn, but feel free to eat it with any other vegetable of your choice!

  • I experienced no indigestion after eating beans - interesting observation.  Could it be the lack of added sugars, the lack of dairy and meat?  --hmm
  • I really don’t have to add any sweeteners to my oatmeal.  Fresh fruit and raisins are enough.
  • During the fast, I did not experience the heaviness that I often feel after eating certain meals.
  • I plan to periodically use the Daniel Fast for cleansing.

Reflections



  • I am enjoying preparing Daniel Fast meals
  • I have come to the conclusion that bread is really filling - I haven’t had any bread since starting the fast.
  • Last Monday, I had sprinkled cheese on my salad and sour cream on my baked potato.  Yep, I temporarily interrupted my fast.  I was eating with co-workers.  After that meal, I returned to Daniel Fast foods.
  • Never before have I drunk so much water!  But, that's a good thing. 
  • For a couple of days, I had a fever blister and a few pimples.  I think my body may have been purging itself from toxins.

Daniel Fast Chronicles #2

F-O-C-U-S  !!!
That has been my word for this past week and will continue to be my word throughout the Daniel Fast.

Reflections
Week #1


  • Caffeine, even a cup a day, is more addicting than I thought it to be.
  • Adding extra virgin coconut oil to a dish adds delicious flavor.  I added it to my oatmeal, and I was surprised at the flavor.
  • The first couple of days were rough.  I had very little energy and a weird headache  (centered in one area of my head).  I attributed it to not having  my daily cup of coffee.
  • Passing by Starbucks and not stopping was a challenge !!!
  • I realized that so much sugar is added to foods.  I have been reading labels - even more.  Some canned fruits even have added sugar.
  • I never realized how much discipline it requires to eat only fruits, vegetables and whole grains.
  • I  really missed my whole grain bread.  I had just started to eat Ezekiel bread.  But, I couldn’t have it on the Daniel Fast - it contains yeast.😞
  • I don’t drink cow’s milk, but I sure did miss my cheese and yogurt!
  • I bought more fruits and vegetables than ever before.
  • PREPARATION is the key to success on the Daniel Fast.  I prepared salads ahead of time.  I kept sunflower seeds, peanuts and popcorn in the pantry.  I even stored smoothies in Mason Jars in the refrigerator!

Today, June 1st, is the day I started the Daniel Fast.  The Daniel Fast is a biblical based fast of eating only fruits, vegetables and drinking plenty of water.  According to the book of Daniel, Daniel fasted for 21 days.  The Daniel Fast is a spiritual journey that involves being in tune with God as well as refraining from dairy, meat and processed food.  


My goals for this fast are as follows:
  • Edify body, soul and spirit.
  • Establish and stick with some type of exercise.  (I always start and stop.)
  • Acquire an overall feeling of well-being, both mentally and physically.
  • Cleanse my body of toxins from processed foods.
  • Refrain from toxic people who so often deplete positive energy!

Meatless Monday #35

Last weekend, I had the opportunity to enjoy a meal from a vegan restaurant.  It was my first time ever going to a vegan  establishment.  While traveling to visit family in Florida, I stopped at Vegan2go in Gainesville.



 

After looking over the menu, I was so excited about the options.  I decided to order the chicken and rice - a familiar dish.  I had never tried mock chicken before, and I was unsure as to how it would taste.  I only waited about 10 minutes.  When I received my order, I was amazed!  It was delicious - very full of flavor.  The mock meat was definitely the texture of chicken, and it had been prepared in some type of sweet, ginger sauce.  It came with yellow jasmine rice and fresh cucumbers and tomatoes.  The serving was more than enough.  I was able to get two servings from one entrée!







The price was not bad - $8.25.  The service was good.  And, I will definitely visit Vegan2go again when I'm in Gainesville.

Meatless Monday #34

I have always enjoyed eating Cream of Wheat.  This smooth, creamy hot cereal is not just for breakfast.  It can be enjoyed anytime during the day!
 

Cream of Wheat™ Original Enriched Farina is made with ground wheat, has a smooth texture and is an excellent source of iron and calcium. The traditional cook-on-stove product is prepared by boiling water or milk and slowly pouring in the ground wheat while stirring. Let it simmer while stirring for 2 1/2 minutes after the ground wheat is blended. This product may also be cooked using a microwave oven for faster and easier preparation.

Meatless Monday! #33


 I know that eating at Steak and Shake is not the best place to eat when you're trying to eat a balanced meal.  However, an occasional meal while enjoying family should not do too much harm if you mostly practice healthy eating.  My youngest wanted to eat at Steak and Shake for his birthday, so we took him there to celebrate.  While there, I thought I would try the veggie melt. It was delicious!  I will definitely have to make a version of this at home.

Meatless Monday #32

Applebee's Review

Tomato Basil Soup and Four Grille Cheese Sandwich ($6.99)
 
A blend of classic sharp cheddar, aged white cheddar, Asiago & Parmesan cheeses melted to perfection on freshly toasted Tuscan bread. Served with a bowl of tomato basil soup.

I tried this sandwich and soup combo for the first time, and it was both delicious and very filling!  

 
 
Green Goddess Wedge w/out bacon ($4.99)
 
I had the server to prepare my wedge without the bacon.  The wedge was the perfect compliment for my sandwich and soup combo.  It is good to know that more restaurants are offering meatless meals that are both wholesome and delicious.  It's nice to know that when you want to go meatless, there are actually options beyond the traditional side salad.

Meatless Monday #31

 
 
 
My Cheddar, Spinach and Tomato Panini
 
One of my favorite foods at Starbucks is their Roasted Mozzarella Panini.  It is so delicious with a cup of coffee, and it can be enjoyed at any time of the day.  For the longest, I had been planning to make my version of a Panini, and I finally did!  I did not roast my tomatoes, nor did I use Mozzarella.  Instead, I used sharp cheddar and sliced Roma tomatoes.  For the bread, I used Pepperidge Farm's Whole Grain Honey Wheat. 
 
 
 
 
Probably not necessary, but I slightly toasted my bread before adding the sliced tomatoes.
 
Then, I topped the tomatoes with fresh spinach and sprinkled it with Ms. Dash (table blend).
 
Afterwards, I placed the Panini in my George Foreman's grill for about 5 minutes - long enough for the spinach to wilt and the cheese to melt.

Yes - that piece of bread is considered the butt of the bread or the end piece.  Sometimes, I'm frugal like that. Eating the butt of the bread does not alter the taste one bit!
 
The next time I make this sandwich I will add chives and parsley.  Have you ever made your own Panini?  If so, what did you put on it?
