Meatless Monday #24

Rattlesnake Beans

Rattlesnake Pole BeanYou read it correctly - rattlesnake beans!  They are so called because of their rattlesnake appearance - green and purple streaks.  They can be cooked just as you would any other snap bean.  I was surprised to find the taste the same as other fresh snap or pole beans.

To cook the beans, chop celery, orange bell peppers and onion.  Sauté them, and add to boiling water.  Season to taste, and allow them to cook until they're done.

Rattlesnake Beans
Brown Rice
Sliced Roma Tomatoes

  2. mmmm. Looks delish! And by the way..
I'm sorry i am using your comment area to write you a message BUT I just now realized that you are probably not receiving ANY of my replies to your sweet and very much appreciated comments on my blog. Aparently, there is a thing called "no-reply" commentor which means that if your email is not linked up to your comments then the owner of the blog post can not reply back to your comment via email. I had no clue of this until today! I feel just horrible because I've been blogging and replying to comments for MONTH now without knowing that people weren't receiving a reply from me. I'm sorry, girl!

  3. Being a totally fearful snake person [even garter], I couldn't even eat anything with a name like that. BUT it looks wonderful! I'm a real green beans person. Thanks for sharing.

  8. There is nothing better than a friend with a garden. Rattlesnake beans are something new to me. I love that when I eat Real Food, I don't have to get bored eating the same brown and beige foods all the time. Thanks for sharing this with all of our readers at Let's Get Real. Your posts are the first that I look for. I enjoy them so much.
