Meatless Monday #23

 
 
 
Brussels Sprout Salad
 
 
Ingredients:
chopped Brussels Sprouts
chopped celery
chopped Bell Peppers (orange and green)
chopped Granny Smith Apple
 

 
 Cooked Brussels Sprout and Carrots
 
To make this, I sautéed chopped Bell Pepper, Celery and Onion in about a teaspoon of extra virgin olive oil.  Then, I added the chopped Brussels Sprouts and carrots to the saucepan.  I added in about a half cup of water, seasoned it to taste, and allowed it to cook for about 25 minutes on medium heat with the lid on.

I steamed some rice to serve with the vegetables.



When I bought the Brussels Sprouts, I really didn't know what to expect as far as preparing them.  In the past, I had only eaten a few at a restaurant.  I have decided to gradually add in different ( the ones that I would not normally buy ) fruit and vegetables to my diet.  After cooking them, I decided that I like them much better in a salad!  Maybe, I should try cooking them a different way.  Any suggestions?

    This looks great, I've already pinned it! I haven't done much with sprouts other than roast them cuz hubby wasn't a fan...this is encouraging me to try again!

  2. Hey Trinity! I'm not a big fan of brussel sprouts at all. But cutting them up and sauteing them like you did, doesn't sound bad at all! Lol! Have a good one!

  4. This looks good. I've never thought to cook Brussels Sprouts with carrots. I'll have to try that next time I have Brussels Sprouts. As for the salad it looks good, I'm just wondering how Brussels Sprouts taste raw? I'm guessing they taste like cabbage/cole slaw. Anyway, something, I'll definitely try in the future. Keep it up!

  6. I love your vegetarian recipes. Brussel sprouts are so delicious and they are so good in salads. I did something similar a couple of months ago, but this looks pretty tasty. Another must try recipe from you.

  8. Hi Trinity. Good to see you at Let's Get Real again this week. You are always teaching me something new. I just found out that my husband's favorite vegetable is brussel sprouts. Are you kidding me? I've been married to him for 8 years and I had no idea. I've never made them for him. I'm going to try both of these recipes and show him so love that is long overdue.
