Meatless Monday #22

Cooked Kale and Cranberry Beans

The kale was prepared in a crockpot, also.  To prepare them, I diced bell pepper, celery, and onion (about a half cup of each).  I sautéed the pepper, the celery, and the onion which was placed in the crockpot with about 2 1/2 cups of water and a half tsp. of olive oil.  I seasoned the water with vegetable bouillon and garlic powder.  Then, I allowed the water to cook for several hours before placing the kale into the crockpot.  After the seasoned water had cooked in the crockpot, I added in the kale and allowed it to cook on low for several hours until it was done. 
By the way, these were fresh kale greens. 
 
 
To complete the meal, I served it with cornbread and sliced tomatoes.

  2. Beans are very filling, LV. They are also very delicious and can be added to many meals. I, especially, like using black beans in tacos. Many blessings on your week of clean eating!

  3. Girl, I'm a meat eater, but you've got me over here salivating, lol! I usually saute my kale in a little bit of olive oil and add some sea salt for taste, but I'll be using your recipe from now on...looks delicious! Thanks for sharing...have a wonderful week my friend!

    I'm going to try eating kale your way, as well. The only other way that I've eaten it is in a salad.

  5. Your healthy eating is inspiring. I'm sorry to say I've NEVER had kale. I know, right?? But I eat beans a lot. They are yummy and very filling.

    1. Beans are very filling, Meredith. I think that if you give kale a try, you'll be very surprised at the taste. For years, I was hesitant to try kale. But, when I first tried it in a salad, I fell in love with it.

  6. Hi Trinity,

    I have never eaten cranberry beans. This is the perfect meal. Kale is always a winner. It's not called the king of the greens for nothing.:) Love your tomatoes. I thought I was the only one who bought the smaller tomatoes. I'm guessing Roma?

    Anyway, looks good. I'll have to try cranberry beans.

    1. Yes, Evelyn, those are Roma tomatoes. When I buy tomatoes at the grocery store, Romas are my tomatoes of choice.

      I hope you try cranberry beans. If you do, you will discover that they taste very similar to Pinto Beans.

  7. Cranberry beans? I've never heard of them. I love learning about new foods. I'm trying to include more beans into my diet. I am looking forward to giving this a try. I love your focus on meatless meals. When the meal is as delicious and filling as this..........who can miss the meat? Hmmm.......maybe my teenage son. I'm working on him.   9. Wow! I've been trying to get us into more beans lately and just when I thought I heard them all, you throw this one my way! Cranberry beans? Another good one to know!
